The Recipe: Nigerian Groundnut Soup

Ingredients (serves 4):

  • 200g GreenSprint groundnut paste (or natural peanut butter, no added sugar)
  • 500g chicken pieces (bone-in) or fish fillets
  • 2 tablespoons GreenSprint red palm oil
  • 400ml blended tomatoes and scotch bonnet peppers
  • 1 medium onion (blended)
  • 1 tablespoon GreenSprint dried Crayfish (ground)
  • 2 cloves garlic (crushed)
  • 1 teaspoon ground Crayfish
  • 500ml water or light stock
  • Salt and seasoning to taste
  • Fresh scent leaves or basil to finish

Step 1 (15 minutes): Season the protein with salt, garlic, and a pinch of seasoning. Cook in a pot with enough water to cover until tender. Remove the protein and reserve the stock.

Step 2 (10 minutes): In the same pot, heat the red palm oil over medium heat. Add the blended onion and fry for 3 minutes. Add the blended tomatoes and peppers. Fry for 8–10 minutes, stirring frequently, until the tomato mixture reduces and the oil floats to the top.

Step 3 (5 minutes): Add the groundnut paste to the pot. Stir well to combine with the tomato and palm oil base. The mixture will thicken significantly.

Step 4 (15 minutes): Add the reserved stock gradually, stirring to achieve a smooth, thick soup consistency. Add the Crayfish. Simmer over low heat for 15 minutes, stirring occasionally.

Step 5 (5 minutes): Return the cooked protein to the pot. Stir well. Simmer for a further 5 minutes. Taste and adjust seasoning. Finish with fresh scent leaves or basil.

Total time: 50 minutes. Serves 4. Stores in the fridge for 4 days.
