🛒 INGREDIENTS

The Rice Base:

  • 400g long-grain parboiled rice

  • 2 cloves garlic (crushed)
  • 1 tsp thyme, 1 bay leaf
  • 500ml chicken or vegetable stock
  • Salt & seasoning to taste

  • 600g chicken thighs or beef strips
  • 2 tbsp GreenSprint suya spice
  • 1 tbsp groundnut oil
  • Salt to taste

The Recipe: Step by Step

Part 1: The Suya Protein (20 minutes)

Step 1: Toss the protein with suya spice, coconut oil, and salt. Ensure every piece is well coated.

Step 2: Cook in a hot oven (220°C) for 20–25 minutes, or in a hot pan for 4–5 minutes per side, until cooked through and slightly charred. The char is important — it adds the smoky depth that makes suya distinctive.

Step 3: Set aside to rest while you cook the rice.

Part 2: The Moringa Jollof Rice (35 minutes)

Step 1 (5 minutes): Heat the red palm oil in a large, heavy-bottomed pot over medium-high heat. Add the blended onion and fry for 3–4 minutes until softened.

Step 2 (10 minutes): Add the blended tomatoes and peppers. Fry over medium-high heat, stirring frequently, for 8–10 minutes until the tomato mixture has reduced significantly and the oil begins to float on top. This step is critical — under-frying the tomato base is the most common jollof mistake.

Step 3 (2 minutes): Add the garlic, thyme, bay leaf, and seasoning. Stir well. Add the moringa powder and stir to combine — it will dissolve into the tomato base.

Step 4 (2 minutes): Add the washed rice. Stir well to coat every grain with the tomato and palm oil mixture.

Step 5 (20 minutes): Add the stock. Bring to a boil, then reduce heat to the lowest setting. Cover tightly and cook for 18–20 minutes until the rice is cooked through and has absorbed all the liquid. Do not lift the lid during cooking.

Step 6 (3 minutes): Remove from heat. Leave covered for 3 minutes to steam. Fluff with a fork.

Assembly

Serve the moringa jollof rice topped with the suya protein. Add a side of fresh tomato and onion salad, fried plantain, or steamed vegetables. Garnish with fresh herbs if available.

Meal Prep Application
