The Recipe: Egusi Soup for the Modern Kitchen
Ingredients (serves 4):
- 200g ground egusi (melon seeds)
- 500g protein of choice (chicken, fish, goat, or firm tofu)
- 3 tablespoons GreenSprint red palm oil

- 1 medium onion (blended or finely chopped)
- 2 scotch bonnet peppers (or to taste, blended)
- 2 cloves garlic (crushed)

- 500ml water or light stock
- Salt and seasoning to taste
- 1 stock cube (optional)
Step 1 (10 minutes): Season and cook your Protein with onion, garlic, salt, and a stock cube until tender. Set aside, reserving the stock.
Step 2 (5 minutes): Heat the red palm oil in a large pot over medium heat. Add the blended onion and pepper. Fry for 5 minutes, stirring frequently, until the raw smell is gone and the mixture has darkened slightly.
Step 3 (3 minutes): Add the ground egusi to the pot. Stir well to combine with the palm oil and pepper mixture. The egusi will absorb the oil and begin to clump — this is correct.
Step 4 (15 minutes): Gradually add the reserved protein stock (or water), stirring to prevent lumps. Add the Crayfish. Reduce heat to low and simmer for 15 minutes, stirring occasionally, until the egusi is cooked through and the soup has thickened.
Step 5 (5 minutes): Add the cooked Protein and the leafy greens. Stir well. Simmer for a further 5 minutes until the greens are wilted and the Protein is heated through. Taste and adjust seasoning.
Total time: 40 minutes. Serves 4. Stores in the fridge for 4 days.
